Billboards Disaster

>> Tuesday, June 24, 2008

This is what I saw after the typhoon - a giant billboard that crashed on the roof, a very frightening sight! I was relieved when I saw that the billboard crashed on top of the car repair shop and not on one of the houses there. It's in the side of the Pasig River in Rosario, Pasig City where I passed everyday when going to work.

I had this disapproving mind over the growing number of billboards. I think it should be placed only on highways or on places away from the residential areas because it's a big hazard to people and a great disaster on storm and typhoon.

In case you don't know advertisers pays big amount of money for these billboards to be placed on top of buildings or houses the reason why people exchange their safety. With the recent economic crisis befalling our country people tend to think of their stomach rather than the risk they're facing when they let businessmen advertise their products through billboards.

Josh' Interest On Our National Hero

>> Thursday, June 19, 2008

I was asked by my kids what’s the occasion today early in the morning as they saw some celebration being shown on morning news shows. I’ve been puzzled by their inquiries and peeked at the show they’re watching. Uhm ok so it’s the birthday of our national hero, Jose Rizal. As my little son is always curious about so many things he was interested who is this person that was celebrating his birthday without cake. You know Josh will not sing you a happy birthday song if there’s no cake on the table lol! Birthdays for him are always associated with blowing candles on cake, little kids’ requirements.

Anyway as he’s very keen on his questioning me I told him some of what I’ve learned in my high school subjects like the books that he authored the Noli Me Tangere and El Filibusterismo which ignited the revolutionary heart of the Filipinos to rebel against the Spaniards, well that’s so heavy for a kid but Josh was really interested with big eyes staring at me! Sometimes I thought that he’s not only 4 years old when he talk and act like that, very matured for his age.

I told him that his Ate Ruth and Gen have been in Rizal’s house in Calamba last year (as seen from pictures above) and he got so excited that I promised him that I’ll bring him there next time, maybe on a field trip just like my daughters. I’ve shown him pictures of Rizal’s house when we were there and he thanked me for all the information I’ve told him. He then told the story to whomever he came to talk to that day.

Daddy's Day

>> Sunday, June 15, 2008

Its' father's day and because it's a Sunday also we spent the whole day at the church. We earlier planned to have lunch at gateway mall but since we have afternoon activities we changed our plan. We decided to have dinner in Tiendesitas but after rounding it and also that of SM Hypermart the kids requested that they just want to eat at Jollibee. They said that after almost 30 minutes of rounding the place.

Anyway what's important is the kids' preferences more than anything because hubby and me can go to any place we want on our special anniversary occasions. This one is for our family so we settled for our kids' choice. Since we can't find any branch at the place we went to the nearby station.

Celebrating Father's Day is a simple occasion for us, just a simple eat-together kind is enough as long as we're happy together. As we prayed before eating we thanked God that He has given us a good father and husband. I prayed that He'll always protect my hubby in whatever he do. I personally thanked God that He gave us a caring and responsible father and a husband that's so loving and understanding. Ed has also been a very good minister in the church and always do his best to keep our family in the bosom of God's love and care.

Celebrating Independence Day

>> Thursday, June 12, 2008

Despite the change of holiday schedule of celebrating Independence Day some people did celebrate this special freedom day on the real exact date. Memorable and historical days shouldn't be rescheduled as it brought about historical events and memories.

This day was best celebrated in Emilio Aguinaldo's house in Kawit,
Cavite where the historical first celebration of Independence Day was first done. Hope they'll stop changing the dates of historical events.

Macaroons For My SIL

>> Tuesday, June 10, 2008

It's my sister-in-law's birthday today and because my brother's family loves eating leche flan and macaroons I've decided to cook hundreds for them, hundreds of macaroons not the leche flan of course.

This time preparation is not that tasking as my daughter Ruth helped me with mixing and arranging paper cups on the trays.

Here's our mixture:

2 cups dessicated coconut
1 big can of condensed milk
2 medium eggs
2 Tbsp. shortening (vegetable oil will do)
2 drops of vanilla
sugar to taste

Here's how we mixed it:

Beat eggs on a big bowl, pour dessicated coconut on it and slowly mix condensed milk. After the three has mixed up evenly put some drops of vanilla and add oil. If you feel it lacks sweetness add sugar.

Here's how we cooked it:

Preheat oven to medium heat only. Place paper cups on rectangular trays and drop little macaroons mixture on it. Cooked for about 20 minutes, see if the white color turns light brown. Some mixture takes longer to cook but it's easier if you watched it carefully, I'm sure you don't want burnt macaroons. Here's how it looks on the oven!
